Mai's Stirfry

This recipe doesn't have any specific measurements. It was given to us by one of George's co workers. You'll just have to experiment and figure it out like we did. Believe me, that's half the fun!

Cubed chicken or beef
soy sauce
cornstarch
oil
black pepper
minced garlic
sesame oil
oyster sauce
salt
water
vegetables (your choice)

Mix soy sauce, cornstarch, oil and black pepper in small bowl. Mix in cubed chicken. Let sit 5-10 min. Stirfry chicken in oiled wok. Add garlic, then stirfry vegetables. Add water. Add cornstarch as needed. Add oyster suace near end, with salt. Just before finished, add sesame oil. Caution: Use high heat for vegetables!

**If you're not sure where to get oyster sauce, check your local supermarket in the asian food section.**

Easy Fudge

This recipe is super easy and kinda of cheating but it turns out great everytime. I won't tell if you don't!

1 3/4 c. sugar
1 tsp. vanilla
2 Tbsp. butter
2/3 c. evaporated milk
1 1/2 c. chocolate chips
22 regular marshmallows

Bring sugar, milk and butter to a boil. Boil 5 minutes, stirring constantly. Remove form heat. Add marshmallows and chocolate chips. Stir until melted. Sitr in vanilla. Spread in buttered pan 9x9x2 pan. Cool and cut.

My Favorite Frosting

These are two versions of my favorite all purpose butter frosting. Great for cakes, cookies and eating off the spoon.

Vanilla Butter
1/3 c. butter
3 c. confectioner's sugar
1 1/2 tsp. vanilla
2 tbsp. milk

Chocolate Butter
1/2 c. butter
2 oz. melted unsweetened chocolate
2 c. confectioner's sugar
1/2 tsp. vanilla
2 Tbsp. milk

Blend butter & sugar (and chocolate). Add vanilla. Add milk gradually, adjusting for desired consistency.
